So this year, to make sure no fan of fine Scottish butter tablet goes away disappointed, we've upped production a few notches.&lt;br /&gt;The kitchen table was a tablet lover's dream tonight as bag after bag after bag was filled, sealed and labeled, ready to take along to Ben Ledi Park on Saturday morning.&lt;br /&gt;It's been a busy few days, but it'll be worth it.&lt;br /&gt;Callander Highland Games is one of our favourite events. It's out in the open at last.&lt;br /&gt;Actually, it's no secret. Our famously fabulous Scottish butter tablet may cost a little more than some other brands out there, but there's a very good reason for that.&lt;br /&gt;It's because it's better.&lt;br /&gt;That's not just big-headedness or idle boasting.  Our sweets are better because we don't take short-cuts. We don't use cut-price (and therefore low-quality) ingredients, and we don't leave it to machines to turn out vast quantities of confectionary.&lt;br /&gt;These things make a difference. Buy some low-price tablet and take a look at the ingredients. Glucose syrup? What's that doing in there? Vanillin? Why use a cheap flavouring when real vanilla tastes better? Salt? Doesn't good salted butter give enough of a kick to the flavour?&lt;br /&gt;The reason companies use these things, in just about every case, is cost. Using cheap, lower quality ingredients means they can churn out vast quanities of low-cost sweets. Cheap to produce, cheap to sell.&lt;br /&gt;Which is fine, if you just want a quick hit of something sweet. But Fablet was born because I wanted more. I love tablet, and have done ever since I watched my gran make huge bubbling batches of the stuff.&lt;br /&gt;I want every bite of tablet to taste like it was made with love and with the very best ingredients - not like it was thrown off a conveyor belt to stuff into the mouth of your average not-very-demanding five-year-old.&lt;br /&gt;Sweets are a luxury. They won't save the world or cure diseases. When done right, though, they're a hit of pure joy. Good sweets make the world better. Bad sweets make you wish you hadn't bothered.&lt;br /&gt;I discovered that, to my cost, this week. On holiday in the far, far north of Scotland, I stopped off at a newsagent for a paper and spied some little bags of tablet on the shelf. Partly to check out the competition and partly to satisfy my sweet tooth, I bought one.&lt;br /&gt;One bite told me all I needed to know. It was salty, with an unpleasantly slimy, fondant-ish texture and a lingering aftertaste of fake vanilla.&lt;br /&gt;It's the familiar 'almost-tablet' taste you get when a confectionery company has cut corners instead of following traditional recipes. A quick look at the ingredients told me all I needed to know - all the usual suspects were there, from glucose syrup to vanillin and extra salt.&lt;br /&gt;Maybe I'm spoiled, but I prefer my tablet to taste like tablet, not &lt;span style="font-style: italic;"&gt;almost&lt;/span&gt; like tablet. That's why I use organic Scottish butter, to give it a rich, smooth taste. That's why I use Madagascan vanilla instead of cheaper, but much less tasty, alternatives like vanillin. That's why I make Fablet in small batches, to make sure every single bag is as good as it can be.&lt;br /&gt;Pay 99p for a bag of tablet and you'll more than likely get precisely what you pay for - something sweet, but without much flavour or texture.&lt;br /&gt;Buy Fablet and you're getting a whole lot more than that. It's about quality, not compromise. Classic Vanilla's always a big hit, so I'll be packing plenty of that. This time around, I'll also have some White Chocolate and Macadamia - another oflavour that's always popular - as well as Irish Cream and more.&lt;br /&gt;Irish Cream's a big family favourite here in the Fablet household, so if you haven't tried it yet, come along to Maxwell Place for a free sample - I'm sure you'll be impressed.&lt;br /&gt;I'll also be selling one of my own personal favourites, and a previous Flavour of the Month ... Fablet has a new Flavour of the Month.&lt;br /&gt;After much deliberation, I decided it was time to dive straight back into childhood with a fruity blast of fun in the shape of Dolly Mixtures.&lt;br /&gt;British readers won't need any introduction to these yummy little items, but for the benefit of our overseas chums - and those whose parents wouldn't let them near such brightly-coloured confectionery - here's what Wikipedia has to say about Dolly Mixtures:&lt;br /&gt;"&lt;span style="font-style: italic;"&gt;a Scottish confection produced for many years by different companies. The mixtures contain a variety of fondant shapes, such as cubes and cylinders in many colour combinations with subtle flavourings. The mixtures also include hard-coated fondants in "round edged cube" shapes and sugar coated jellies&lt;/span&gt;"&lt;br /&gt;What Wikipedia singularly fails to note is that,&lt;br /&gt;a) They're entirely delicious and utterly addictive, and&lt;br /&gt;b) It's a flavour that works particularly well in tablet.&lt;br /&gt;I pondered for a while over this one, as the previous blog entry noted. Was this flavour too silly? Too juvenile? Too fruity?&lt;br /&gt;In the end, common sense prevailed and all such notions went out the window. It's too &lt;span style="font-style: italic;"&gt;nothing&lt;/span&gt;, except too good to keep to myself.&lt;br /&gt;So run on over to the Fablet webshop and buy some. Lateness and me, we go hand in hand, like vegetable protein bacon-flavour streaky strips and eggs. Like car ownership and massive expense. You get the picture.&lt;br /&gt;This time, though, I'm late for a reason. I'm supposed to be unveiling this month's flavour of the month, but I just can't settle on one.&lt;br /&gt;And why? Because I have too much choice! I love tablet. I love flavoured tablet. I love experimenting with flavoured tablet to find the yummiest, &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;scrummiest&lt;/span&gt;, most irresistible flavour combinations.&lt;br /&gt;So that's what I've been doing, only I've come up with so many delicious things I can't quite decided which one should be March's Flavour of the Month. If snuggling under a cosy duvet with a good book while the wind whistles safely from the other side of double glazing had a flavour, this would be it. It's warm, comforting, yummy and just plain fab.&lt;br /&gt;One of the pleasures of making sweets is coming up with something as good as this. First, you get to enjoy it. I'm not sure if it's  normal to be quite this pleased with something as simple as a new pan, but it's just about the world's finest piece of cookware.&lt;br /&gt;For one thing, it was a gift - a well-chosen, well-timed gift. For another thing, it's large, holds lots of tablet and, better than just about all of the above, it practically cleans itself. Anyone who's ever tried to scrub a pot caked in tablet - which can assume the consistency and temperament of quick-set concrete in next to no time - will know what a blessing an easy-clean pan can be.&lt;br /&gt;It's  speeded up the process in so many ways, and given me more time to try smaller batches of test flavours (I always try to think a few Flavours of the Month ahead, just to make sure  everything's been well taste-tested).&lt;br /&gt;So today's been spent filling orders and trying out some new things. One of the things I've been trying out has already identified itself as February's Flavour of the Month and might well be my very favourite Flavour of the Month so far.&lt;br /&gt;Really, it's fantastic. Delicious. Addictive.&lt;br /&gt;What is it? Well, that would be telling. It's a tough job, but &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;someone's&lt;/span&gt; got to do it. Luckily, that someone happens to be me.&lt;br /&gt;So far, the first few months of the year have been decided. I won't reveal then all here, because that would take away the fun.&lt;br /&gt;January's flavour, though, is one I'm very, very pleased with, and I'm pretty certain no one out there will ever have tasted tablet quite like it before.&lt;br /&gt;As you &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;might've&lt;/span&gt; guessed from the title of the blog entry, I've tried combining the flavours of two of my favourite things - and the results speak for themselves.&lt;br /&gt;Take the cinnamon-y warmth of a fine sticky bun and the smooth, mellow blend of vanilla, butter and fair trade sugar that goes into every batch of &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Fablet&lt;/span&gt;, and you get our &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;Stickey&lt;/span&gt; Buns &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;Fablet&lt;/span&gt;. This classic winter warmer comes with notes of cinnamon and nutmeg, along with rich vanilla and just a dash of rum flavour. It's yummy, inescapably festive and available for one month only.&lt;br /&gt;The other new kid on the block is Gratuitous Violets. Violet-flavoured tablet? Sounds like an odd mix, I know, but it works. It really, really works. This stuff goes beyond delicious and into the realms of the almost-magical.&lt;br /&gt;I love it. It's aromatic, floral, sweet and very, very distinctive. It may not be to &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;everyone's&lt;/span&gt; taste, but for those daring souls who don't mind trying something a bit different it could be a revelation.&lt;br /&gt;Head over to the shop to try out these new flavours - or to stock up on some old favourites. Oh no. Quite the reverse, in fact.&lt;br /&gt;I've gone into restock-mode, thanks to that recent sell-out success, while also carrying out a bit of what might be called either research and development or, probably more accurately, 'messing about in the kitchen'.&lt;br /&gt;The result of these labours is that a few new flavours are ready to roll into our roster. I'll be revealing two of them in the very near future, with others to come in future months. All are guaranteed to make our celebrated Scottish butter tablet even tastier than ever.&lt;br /&gt;Fancy a few hints?&lt;br /&gt;Well, one will be our flavour of the month for December and is carefully themed to suit the month's festivities. No, it's not turkey flavour. Or Brussels Sprout.&lt;br /&gt;The other flavour is something I happen to think is more than a teensy bit special. It doesn't hurt, of course, that sales exceeded expectations - in fact, we were completely sold out by the end of the event's final day.&lt;br /&gt;The Good Food Show was a huge event, with a dizzying array of things to see, try and taste, so it means a great deal that so many of you took the time to visit us at our stall alongside the &lt;a href="http://www.longcroftsoap.co.uk"&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;Longcroft&lt;/span&gt; Soap Company&lt;/a&gt;.&lt;br /&gt;It was a real pleasure to get to share some of our fabulous flavours with so many fine people. There were quite a few visitors who'd never even tasted Scottish butter tablet before, so it was nice to introduce them to one of the world's great taste experiences.&lt;br /&gt;The event itself - running at the Glasgow &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;SECC&lt;/span&gt; until this Sunday, November 4 - is fantastic, and well worth a visit. There are stalls and displays stretching as far as the eye can see, with literally hundreds of tasty treats to sample, as well as cookware, kitchen and household goods and loads more.&lt;br /&gt;There are also guest spots from top TV chefs Nick &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Nairn&lt;/span&gt;, James Martin and Gordon Ramsay. Now, I didn't get to see Mr Ramsay myself, since I was busy handing out free samples of tablet, but, from the roar of the crowd as soon as he appeared, you might be forgiven for thinking the Led Zeppelin reunion had started early. For foodies, Ramsay has achieved rock star status. The crowd absolutely loved him.&lt;br /&gt;Beth was ready with a bar of soap to wash out his infamously filthy mouth, but it seems the obscenity-prone chef was on his best behaviour.&lt;br /&gt;We're just getting ready to head out for another day at the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;SECC&lt;/span&gt;, and looking forward to it enormously. Today's been a Vanilla day, and tomorrow I'll turn my hand to Amaretto.&lt;br /&gt;With a good supply of the key flavours in stock, I can then turn my hand to a few new things, some old favourites and maybe even some extra batches - just in case things turn out to be busier than I expect. Be prepared, as I'm sure &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;I'd've&lt;/span&gt; been taught if I'd ever been a Boy Scout.&lt;br /&gt;Meanwhile, the kitchen's pretty much occupied by me, many pots, many trays and lots of ingredients.&lt;br /&gt;With several pots on the go at the same time, and various trays of tablet cooling on the table, it's all become a bit of a juggling act - stirring one batch, pouring another, packing yet another, then back to preparing another for the stove.&lt;br /&gt;At some point, I'm going to have to stop so people can use the kitchen for other things - like making food. 'It'll never work and, even if it does, no one will like it. People don't want tablet that tastes like tea.'&lt;br /&gt;I can be very dense sometimes. People love tea. People love tablet.&lt;br /&gt;Luckily, my favourite and most trusted taste-tester persisted.&lt;br /&gt;'Make &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;chai&lt;/span&gt;-flavoured tablet,' she said. 'Go on. Make it.'&lt;br /&gt;A week went by.&lt;br /&gt;'Are you going to make that &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;chai&lt;/span&gt; tablet, then?'&lt;br /&gt;Another few weeks passed.&lt;br /&gt;'Have you made it yet?'&lt;br /&gt;Finally, I gave in. It was great.&lt;br /&gt;Never let it be said I don't know when to admit I was wrong. Taster Number One commands it, and she is rarely wrong about anything.</content><link rel='alternate' type='text/html' href='http://www.fablet.co.uk/2007/10/masala-chai-tablet.html' title='Masala Chai Tablet'/><link rel='replies' type='text/html' href='http://www.blogger.com/comment.g?blogID=2300292474249075460&amp;postID=1667826811949224115' title='0 Comments'/><link rel='replies' type='application/atom+xml' href='http://www.fablet.co.uk/rss.xml' title='Post Comments'/><link rel='self' type='application/atom+xml' href='http://www.blogger.com/feeds/2300292474249075460/posts/default/1667826811949224115'/><link rel='edit' type='application/atom+xml' href='http://www.blogger.com/feeds/2300292474249075460/posts/default/1667826811949224115'/><author><name>Fablet</name><email>noreply@blogger.com</email></author></entry><entry><id>tag:blogger.com,1999:blog-2300292474249075460.post-6823902571252709771</id><published>2007-10-06T21:01:00.000+01:00</published><updated>2007-10-06T21:15:44.531+01:00</updated><title type='text'>Christmas starts here</title><content type='html'>All right, it may seem a tad early for festivities, but after a fabulous day at &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;Balfron&lt;/span&gt; today, I'm full of festive cheer.&lt;br /&gt;First, and most importantly, today's &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;Pre&lt;/span&gt;-Christmas Cracker at the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;McLintock&lt;/span&gt; Hall was an excellent fundraiser for the Friends of &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Strathcarron&lt;/span&gt; Hospice, with pitch fees from the many stallholders and entry fees from even more visitors going to this most worthy charity.&lt;br /&gt;On top of that, &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;Fablet's&lt;/span&gt; head chef, salesman, marketing manager and bag-packager (&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;ie&lt;/span&gt; me) met lots of extremely nice people, all of whom had very nice things to say about the sweets on offer.&lt;br /&gt;White Chocolate &amp;amp;d Macadamia was an early leader in both sales and taste tests (free samples were, of course, available all day), but Classic Vanilla and Irish Cream soon caught up.&lt;br /&gt;I was particularly pleased to see our &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;Chilli&lt;/span&gt; Chocolate and Strawberries &amp;amp; Cream going down so well.
